Mmm, pancakes. The name alone pretty much says it all. Nice hot pancakes with melting butter and yummy maple syrup will make my day anytime. I can eat pancakes for breakfast, lunch, or dinner. Although my chain restaurant preference is IHOP, I have to admit that I tend to like homemade pancakes the best. Even if you don’t cook, you should be able to make pancakes. They’re quite simple. You can get creative with blueberries, chocolate chips, or my personal favorite, cinnamon with sugar and a pinch of vanilla. Also, during these challenging economic times, pancakes are very inexpensive. The only bad part is that 2 pancakes are about 525 calories. So make sure not to tip the scale in the wrong direction.
Miami is having its version of winter (a whole 65 degrees), so its a perfect day for pancakes and a nice big cup of coffee. My stomach is growling just thinking about them! Happy Holidays.
