Summer time means, light fare for me. I love to eat watermelon, popsicles, and a variety of salads! Let’s face it, living in Miami during the summer can be brutal! One of my favorites salads is conch salad! Oh yeah. I really can eat this stuff all year round, but there’s just something about the summer that makes it more enjoyable. Juicy tomatoes, cucumbers, peppers, onions, and tender conch. I’m salivating just thinking about it! I like mine super spicy and with tons of lemon. Yum! I normally make it myself, but if you’re out and about Rustic Inn makes a pretty good conch salad. Super fresh and plentiful. Malicious But Delicious!
